The Cornerstone Coffeehouse is expanding options to be more sensitive to different dietary needs. They have long offered gluten-free options, beginning with baked oatmeal, sports bars and peanut butter chocolate chip cookies. Now, almost one-fourth of their pastries are gluten-free and they carry gluten-free bread.

Cornerstone has also become more inclusive of other dietary needs as the years go by. They offer vegan options, and recently started making paleo-friendly and keto-friendly options. They serve Paleo Coffee Cake and Paleo Trail Mix, and are offering a Keto-Friendly Breakfast Biscuit with eggs, sausage and cheese. Nicole Miller says, “Everyone deserves to eat delicious food, no matter what diet they are on or what restrictions they might have!”
